Community welcomes new French bakery to Norwich
NORWICH – Roger Bransol began his culinary career in France at age 13, operated an enormously popular French bakery in the heart of New York City and now has designs to open a high-caliber French bakery in the Town of Norwich on Nov. 1. The bakery, called La Maison Blanche, French for “The White House,” will be opening in a remodeled home just north of Wal-Mart, a couple hundred feet from the intersection.
For more than 40 years, often for 50 or more hours a week, Bransol has labored behind kitchen doors creating a vast array of pastries, breads and cakes. He also attended a French culinary school in France while continuing to operate his own business. Bransol and his life partner Miby Kim confess that they are growing tired of the constant barrage of demands placed upon them while working in New York City. Slowly over the last few years, the couple has migrated to the Guilford area and purchased a home there a few years ago.
Miby, who has a master’s degree in sociology, lends her administrative talents, helping to orchestrate and maintain their family business. The Manhattan business still thrives and is operated by Sherie Kim, Miby’s daughter who attended French culinary school in New York. “They are nothing less than my family,” said Bransol.
The new Norwich bakery plans to compliment itself with all the options of its city counterpart. “We will put it out there and let the customer decide what we will sell, they are boss. If something does good, we’ll make more and if it doesn’t, we’ll take it away,” said Bransol.
“We’ve received nothing but polite appreciation from the people here. All the agencies and people just pull through for you. They care like it was their own,” said Miby. The couple complimented the atmosphere of the Chenango community, saying people here tended to be more polite and compassionate than other places. “We could have opened in Binghamton, but I like it here. It is close to home,” said Bransol.
La Maison Blanche is scheduled to open on Nov. 1. Anyone can drop by and fish for something desirable from the display cases or place an order for larger events such as weddings. Prices, according to the couple, will be comparable to those found at other local grocery stores. The business has already received orders and work has begun.
